Set it to True to isolate one conversion from the application - a page that is not trusted, or one likely to crash or hang the browser - while every other conversion keeps the in-process host, or to give it settings the in-process host fixes for the whole process at its first conversion (WebGlEnabled, the proxy, insecure content, local file access). It costs the time an engine process takes to start, a few hundred milliseconds on Windows.
A conversion with this property set does not decide the process-wide host mode, so it can run before or beside in-process conversions in any order.
